Rework readme.md about workspace configuration again
Also tweak eglot-show-workspace-configuration a bit.
* README.md (Workspace configuration): Rework.
* eglot.el (eglot-show-workspace-configuration): Rework.
(eglot--workspace-configuration-plist): New helper.
